What was for dinner last night?? Jamabalaya!

I got the recipe from HERE, but I made several changes!

Ingredients:

  • 2 tablespoon vegetable oil
  • 1 pound fully cooked kielbasa or Polish sausage, cut into bite size pieces.
  • 1 (14 ounce) can diced tomatoes, undrained
  • 1 can rotel
  • 2 cups water
  • 1 tablespoon sugar
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1 1/2 cups uncooked instant rice (I will cook the rice seperately next time and serve the sausage & seasoning mixture on top because I didn't like the texture of the rice! I will reduce the water called for here from 2 cups to 1/2 cup.)
Directions:
  • In a skillet, add oil, cook sausage till browned
  • Add canned tomatoes, rotel, water, sugar and seasonings. Bring to a boil.
  • Add the rice.
  • Cover and cook for 5 minutes or until the rice is tender.
  • Serve with green beans. Eat and Enjoy!
