Jamabalaya
with green beans
Ingredients:
- 2 tablespoon vegetable oil
- 1 pound fully cooked kielbasa or Polish sausage, cut into bite size pieces.
- 1 (14 ounce) can diced tomatoes, undrained
- 1 can rotel
- 2 cups water
- 1 tablespoon sugar
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/4 teaspoon garlic powder
- 1 1/2 cups uncooked instant rice (I will cook the rice seperately next time and serve the sausage & seasoning mixture on top because I didn't like the texture of the rice! I will reduce the water called for here from 2 cups to 1/2 cup.)
Directions:
- In a skillet, add oil, cook sausage till browned
- Add canned tomatoes, rotel, water, sugar and seasonings. Bring to a boil.
- Add the rice.
- Cover and cook for 5 minutes or until the rice is tender.
- Serve with green beans. Eat and Enjoy!
